WORLD CUISINES
Achieve personal mastery of culinary craft, theories and techniques covering the East and West, Old and New worlds, and herb and spices over 8 Saturdays. Practise producing your own party at home!

Duration: 8 Saturdays; 9am – 2pm
Course Fees: S$2,100 (excluding GST)

COMPREHENSIVE CURRICULAR
Each of our modules is specially designed by a native chef instructor who has profound historical and cultural knowledge of his ethnic cuisine and is also a master of explicit techniques in his culinary craft. Learn the disciplines of table setting and service, herb and spices, and the basics of a variety of ethnic cuisines from seasoned professionals who are experts in their respective areas.

Who should attend? Leisure cooks who wish to master culinary craft and learn the techniques of cuisines from a dedicated team of professional chef educators!

Next intake: March 2009


Participants will be given chef hats, aprons, personalised chef jackets and professional 5-piece knife sets.

Week 1:
Basic Culinary Craft, Table Setting & Service

Week 2: Techniques of Healthy Cooking & Nutrition
Week 3: Soups, Stocks and Sauces
Week 4: Basic Western Cuisine
Week 5: Singapore Cuisine
Week 6: Thai Cuisine – Mastering Thai Recipes
Week 7: Mastering Chinese Recipes
Week 8: Desserts – Basic Dough, Cream & Petits Fours
